The first mojito Tim and I ever had was the passion fruit mojito at Cuba Libre.  However, it was really on our Puerto Rican honeymoon that we fell in love with the traditional mojito.  Tim has recreated a lighter version of this Cuban drink.

Here’s what you need:

  • 3/4 oz. simple syrup (See “Simple syrup made simple“)
  • 2/3 oz. lime juice
  • 2 oz. white rum
  • 2 oz. diet lemon lime soda
  • fresh mint (We grow our own!)
  • lime wedges

In the bottom of your glass, muddle the fresh mint and a lime wedge with about 1 shot of rum.  Add the rest of the ingredients and ice, place the bottom portion of a cocktial shaker over the glass, invert and shake.  Then pour into glass and garnish with an extra lime wedge or two.  ¡Salud!
